For me it's Cheese Enchiladas all the way with rice and beans and a side of sour cream..Chips and Salsa for the appetizer and a cold brew.  Yum...

Not to get political, but I will get political. Minus the production of Mexican contribution to this state, it would be nothing. Thank the gods to the the nameless who contribute so much!

My mom made these all the time as a kid so just enjoy them. Plus a little less greasy then beef so healthier. I can't just doo cheese enchiladas, too plain.

I like them all but cheese enchiladas leave me wanting more food, beef is better in other dishes, I love pork but avoid eating it around my family for religious reasons, I know missing out because I love it!
